4 cups of pasta (or whats recommended on the packet of your pasta choice) 190g jar of basil pesto 100g baby spinach or rocket 4og of parmesan cheese 1. In a large saucepan bring the water to boiling, add a pinch of salt and pasta according to the packet of the pasta of your choice. For 4 servings using bowtie pasta I like to use 4 cups. (The water in your pot should be covering the pasta plus another 2 cups above.) Cook the pasta until it is al dente, which means that the pasta still keeps it form and firm to bite but cooked through. 2. Once cooked drain the water out of the pan but leaving a little in the bottom of the pan, this will help evenly coat the pasta in pesto. Add in the pesto and gently stir until all the pasta is covered in pesto. 3. Take the pasta off the heat and add in the spinach or rocket and parmesan cheese and gently toss to combine. 4. Divide the pasta among your serving bowls; sprinkle with extra parmesan and top with fresh cut cherry tomato's. If you're wanting to add extra to your pasta, adding cooked chicken will make the dish more filling. What's your favourite pasta dish?
