GINGERBREAD, TEA & CHRISTMAS


It's almost here! Santa will be packing his sleigh ūüėä and all the festivities will be in full swing. It is nice¬†sometimes to just sit back enjoy a cup of tea and a¬†biscuit and take in¬†everything that is happening in this wonderful time of year!

I have tweaked my gingerbread recipe from 2 years ago and hope you enjoy this festive treat as much as I do!

Ingredients: 

Gingerbread-

125g butter (softened)

1/2 cup brown sugar

1/2 golden syrup

21/2 cups plain flour (sifted)

2 teaspoons ground ginger

1 teaspoon ground allspice

1/2 teaspoon cinnamon 

2 teaspoons baking soda (bicarbonate of soda)

White chocolate melts

Icing-

1 egg white

1/2 cup icing sugar

Peppermint Essence (additional)

Method:

Preheat the oven to 190C

Beat butter and brown sugar together until light and creamy.

Add flour, ginger, allspice, cinnamon, baking soda and golden syrup to the mixture.

Beat until all ingredients are combined and the mixture has formed a smooth dough.

Pop in the fridge for 10-15min or until dough is firm.

Flour your surface and roll out the dough out to about 5mm thick (or between two non stick baking paper sheets). 

Cut out your gingerbread men or any cookie cutter of you're choosing. 

Place on baking trays lined with non slick baking paper and bake between 8-10min or until the gingerbread is golden brown. 

Let cool on the trays

Mix egg whites and icing together until combined, at a drop of peppermint essence.

Decorate however you like! I added red and green M&M's as buttons to some of my gingerbread men.
