2 cups All-Purpose Flour

1/2 cup Sugar

2 teaspoons Baking Powder

1/2 teaspoon Salt

2 Eggs

1 cup Milk

1/3 cup Vegetable Oil

2 teaspoons Pure Vanilla Extract

1/2 cup Rainbow Sprinkles

1. Preheat your waffle iron to it is ready for this delicious mixture to become a fun and colour waffle. 2. In a large bowl whisk together the flour, sugar, baking powder and salt till combined. 3. In a small bowl mix together the eggs, milk and oil with a fork to break apart the egg yolks.  4. Make a well in the dry ingredients and add your eggs, milk and oil. Stir the batter until it is all combined then add the vanilla extract and rainbow sprinkles and watch the colourful magic come alive in font of you. 5. Spray the grids of the waffle iron with nonstick cooking spray. Spoon the batter onto the hot iron, close the other side and cook for 4-5 minutes. 6. Once cooked; carefully remove the waffle from the iron and trim the edges.  7. Now you can be as creative as you want with toppings, for funfetti I always like adding 2 waffles to a plate and adding a scoop of vanilla ice cream, some maple syrup (or your choice of syrup) and whipped cream. Freshly cut strawberries also quite nice to add a fresh fruity crunch. What is your favourite toppings to put on your waffles?  I'd love to hear what you do and try something new.
