This has to be my all time favourite recipe for chocolate chip muffins. They have the right amount of fluffy cake to chocolate chips, with a golden top. Perfect for any occasion or just as a sweet treat.
2 cups of flour
1/3 cup of white sugar
1/3 cup of brown sugar
2 tsp of baking powder
1/2 tsp of salt
2/3 cup of milk
125g of butter that has been melted
1 tsp vanilla essence
250g (1 cup) chocolate chips
Line a baking tray with cupcake papers. Makes approximately 12.
Mix the flour, both sugars, baking powder and salt in a large mixing bowl.
In another bowl mix the milk, eggs, butter and vanilla essence.
Combine both the dry mixture and wet mixture until smooth.
Add the chocolate chips and fold them in.
Evenly distribute the mixture into the cases, they should be about 1/2 a centimetre from the top.
Bake in an oven at 200°C for 15 - 20 minutes.
